I was diagnosed pre-diabetic at a young age, and for years I struggled to balance sweet cravings with my health. I’d cut out sweets completely, and while it worked short-term, the moment I hit a number on the scale…I’d binge it all back.

It always felt like there were only three options:

  • “Healthy” but bland
  • Sugar-free, but loaded with artificial ingredients
  • Delicious, but packed with sugar

So I created NEBULA! Chocolate you don’t have to negotiate with. Our bites are zero sugar, a good source of fiber, and still deliver a supernova of flavor. They’re also free of artificial sweeteners, sugar alcohols, dairy, and gluten.

"THE VACUUM" IS DIAGNOSED

2003

Growing up, I was lovingly nicknamed "The Vacuum." No crumb was safe, and my appetite, especially for sweets, seemed endless. But, at the ripe age of just 10 years old, my doctor delivered a reality check that hit harder than any childhood taunt. I was obese and pre-diabetic.

MY "GUILT-FREE" ERA

2004-2019

That moment kicked off a 15-year journey through the ups and downs of unhealthy dieting. Fad diets became my norm and My adolescence cycled through phases of "guilt-free" snacking, only to binge treats the moment I hit a goal weight. Without proper nutrition education or a sustainable plan, I was caught in an exhausting loop, yearning for a better way.

PANDEMIC EXPERIMENTATION

2020

But then came 2020. Like so many, I found myself locked inside with endless hours to kill and a pantry full of temptations. My indulgence? CHOCOLATE, which quickly became a daily ritual. I knew I needed to stop, But rather than swearing off sweets, I decided to make my own.

THE FIRST PRODUCT

2021

Launched at the end of 2021, Nebula Snacks started with two zero sugar chocolate bars, a dark and an oat milk chocolate. While many enjoyed the flavor of the chocolate, I received requests from the crew for smaller chocolates and exciting flavors. Back to the drawing board it was.

CHOCOLATE BITES ARE BORN

2023

After a year of reformatting and reformulating, I spoke to 85 different co-manufacturers to see who could bring my new vision to life! Small bite sized filled chocolates - individually wrapped and ready to satisfy a craving whenever it hits.

2025

Two years of hitting the pavement—setting up tables, handing out samples, and proving these bites really do boost taste buds and belong on retail shelves. Now available in 250+ locations nationwide, including Hy-Vee, Albertsons, Market Street, Wheatsville Co-Op, and more!
